What is pearà in Veneto
Pearà is a kind of sauce served hot , which is placed on boiled meat to flavor it, as much as green sauce or mustard to be clear, but with a completely different taste and texture.

The restaurant, beyond the personal tastes that may or may not meet the style of the place, is certainly one of the most beautiful in Verona, with great attention to furnishings and details, it is one of those places to bring a guest if you need to make a good impression, but also where to spoil yourself with a romantic evening.
But let's move on to the point, the trolley is sumptuous, if you are lucky Armando himself will ask you your preferences and prepare the dish by cutting your favorite pieces. Armando is a character quite popular in town and he is keen to maintain this reputation as an original person both in terms of clothing and movements, his is famous throwing salt crystals at the completion of the dish.
I am a lover of roasts. Our grades? Excellent presentation (the slice of cotechino, for example, is served in a mini pot with its bed of mashed potatoes), the variety of meats is very good, in terms of taste we are definitely at excellent levels, but the roast was a tad dry and the not so tasty boiled meat.
In the same way we found the pearà a little lacking in flavor and the homemade mustard a little too sweet, while the artisanal horseradish is absolutely wonderful. For the sake of information we also ate some gnocchi with meat sauce home made delicious and not bad pasta and beans, scarsini side dishes in quantity, good dessert trolley even if not exceptional. 2. Ciccarelli restaurant
Another very famous place is the Ciccarelli restaurant in Madonna di Dossobuono, a few kilometers outside the city. Here the tenor of the venue is much more da country inn but still welcoming and well cared for, with a family atmosphere. The cart is huge and the variety and amount meat is overdone all very good including accompanying sauces. Before the boiled meat, another house specialty: the handmade noodles that come to you serve plain.
In fact, the three jugs with condiments arrive on the table: tomato, ragù and livers that you can try individually or by mixing them directly on your plate, delicious and greedy with the only defect perhaps of filling the belly too much leaving less space for the trolley. 3. The Pergola
The third address is a less recognized destination, rather it is a jealously guarded secret by true connoisseurs: it is the trattoria La Pergola in Fagnano, a hamlet of Trevenzuolo, about twenty kilometers outside Verona in the direction Mantua.
Certainly of the three it is the one that presents itself worse. Definitely a restaurant old style but that leaves nothing to be desired as much as service and accuracy, let's say it's not one of those representative posts, yet the menu that's what absolutely convinced us the most.
The trolley is not flashy but the varieties of meat are many and the incomparable flavor! You can't say you've eaten the real cart before trying this one! The tender and very tasty roasts, the incomparable quality of the boiled meat, the simply perfect pearà, as well as the green sauce which seemed freshly made, they even have a trolley of side dishes of which you cannot fail to taste the puree.
The rest of the menu? Gods pumpkin tortelli out of the norm and of cappelletti in broth perfect, lastly a cart of sweets not very pimp but well supplied, special especially the tiramisu all at the price of 35 € to person.
A recommendation that applies to all the proposed addresses: if you are in the company of a vegetarian give up, the menu of these restaurants offers no alternatives.
