Four dishes that can only be tasted in Puglia. Here's what not to forget to taste once you arrive in the land of good food, my suggestions also on places to try.
After visiting the Apulia as it should be and after having tasted his delicious dishes, here I have decided to talk about the 4 best dishes I have discovered in this hospitable region.
The tour I did in three days was a tour de force when it comes to food. We sat down at the table at 12.30 and got up at 14.30pm / 15pm, we ate constantly and tasted everything good Apulian cuisine he proposed to us. Do you think it was a sacrifice? Not at all!
Broad beans and turnip greens
As soon as I arrived at Bari airport and took the taxi I asked the driver this question: "What are the dishes that I cannot fail to taste here?", The answer was "have you ever tasted fava beans?". Obviously I was thinking of raw beans, the ones that are eaten by me in the Marche and not of mashed beans accompanied with turnip greens. Result? As soon as I tried them I fell in love with him. Now I also dream of them at night and I'm begging my mom to do it again because she is much better at cooking than me.
Orecchiette del duca
I had already tried the orecchiette several times before visiting Puglia, but it's one thing to eat them outside of this region and it's another thing to eat them there, made by hand. Contrary to what one might think, I didn't eat them with the classic turnip greens, but with tomato and above horse cheese. I also managed to try them in the school of Ceglie, Med Cooking School.
Mozzarella di bufala
La mozzarella di bufala I didn't taste it for the first time in Puglia, it's true, I had already tasted it in Molise and also in Campania, but after having seen it prepare for Masseria Madonna dell'Arco a world has opened up to me. We have already talked about the Masseria in a separate post, which I invite you to read if you want to sleep in a real trullo and also want to eat well, while if you want to taste the burrata and buffalo mozzarella like few times in life, Puglia could give you a great satisfaction.
Bowler hats
I ate dozens of them in just a few days, especially in the city of bowler hats: Cisternino. Here from Aunt Rosa you can eat excellent bowler hats. But what are bowler hats? The name is a little laugh it is true, but after you have tasted them you will remember the goodness of the dish and not its name. Bowler hats are a kind of rolls of meat stuffed with cheese.
In addition to the restaurants, in Cisternino you can eat the bowler hats also in butchers. Exactly, because here the butchers are not like in the other cities of Italy, here you can enter, eye the meat you want to eat, still raw and then let them cook it and bring it to the table. Not bad as a service, fresh and tasty meat at your fingertips, in a very short time and above all super low cost.
