200 sauces for 200 grams of pasta: this is the motto of La Rocca, the Trattoria Bigoleria in Soave (VR), just behind the walls leaving the town.
For those who don't know, i bigoli they are a particular type of fresh pasta, very similar to spaghetti, but thicker and coarser. In this way, they are particularly suitable for retaining the sauce and taking full advantage of it. Coming from popular cuisine, the condiments for bigoli are usually traditional too, from duck to “sardele” (sardines) to “musso” (donkey).
However, Bigoleria wants to exaggerate not only with the quantity of pasta, but also with the variety of sauces with which to season it. There are really 200, and it's not just a saying! 7, 8, 9 ... I don't remember how many pricelist pages were used to describe all the accompaniments: they range from the more traditional, simple with game, to the more delicate ones with fish and vegetables, up to the more imaginative ones, with combinations of even 4 or 5 ingredients, expertly placed side by side.
THEenvironment it looks like a traditional trattoria, with furnishings that leave very little room for the modern, to maintain that atmosphere of times that seem now gone, but which in a medieval town like Soave have good reason to be preserved.
Prices? A dinner with more than enough bigoli, drinks, coffee and cover charge will cost you like going to a pizzeria. So sometimes something different will be worth it, right?
